My third and last bottle. Still a great wine that distinguishes itself by virtue of its great minerality and finesse. One observation I’ve recently made with the Varner Chardonnays is that I like them better if I open them a couple of days in advance and put them in the refrigerator. I find that if I simply pop and pour, the fruit and little oak this has play too prominent a role. A couple of days in the fridge make the wine jel better in my opinion.
