pan seared Verlasso salmon on Polenta cakes

No wine notes tonight (I am still nursing the Samion from last night), but a food note instead. I served pan seared Verlasso salmon on Polenta cakes with sauteed snow peas and a fresh cherry tomato sauce. And then I added some mint at the very end. The acidity of the tomatoes and fresh mint cut nicely through the fattiness of the salmon. And the polenta cakes soaked up some of the tomato sauce.
