2013 Château Thivin Côte de Brouilly Cuvée La Chapelle with roasted chicken, roasted potatoes and brussel sprouts tonight. As the saying goes…bird and beaujolais. Really a great pairing. This wine is very much how I like my Bojo. Deep dark sour cherry, earth, dried savory herbs and a hint of salinity with an acid-laced finish. Almost a Pinot Noir-esque finish. Really a lovely wine that should reward cellaring for many years.
